The moment the fish is sliced, it doesn’t sit around.

Fresh cuts are made available almost immediately after, including rare sashimi-grade portions like kamatoro (fatty collar), noten (top of the head), and hohoniku (cheek). These are typically the kind of selections you’d expect at higher-end Japanese dining spots, but here, they’re served straight from the source—while stocks last.
